Chickpea salad

Serves: 4; Portion size: 1/2 cup; Prep: 20 minutes.


1 cup 

Garbanzo beans

1-1/3 tablespoon


1/4 cup 

red onion

1/4 cup 


2-2/3 tbsp 

green bell pepper

1-1/3 tbsp 

red bell pepper

1/4 cup 


1/4 tsp

ground black pepper

1 tsp

granulated garlic  

2-2/3 tbsp 

lemon juice

1-1/3 tbsp 

canola oil


  1. Drain and rinse canned beans under cold running water.
  2. Thoroughly wash then chop the vegetables, chop the cilantro, then dice the celery.
  3. Combine all ingredients in a mixing bowl or pan. Gently stir together with a spoon. Chill in the refrigerator at 41 degrees F or lower until served.
