Cranberry and pistachio white chocolate bark

Looking for that perfect dessert to take to the office Christmas party? This Cranberry & Pistachio White Chocolate Bark combines antioxidant-rich cranberries, protein-packed pistachios and rich white chocolate. The recipe makes 20 servings, which would be great to make and take to a party or just to have at home and serve during the holidays.

1 pound

white chocolate chips

1/2 cup

dried cranberries

1/2 cup


1/4 teaspoon

sea salt


  1. Place white chocolate chips in a microwave-safe bowl. Microwave for 15 seconds; remove bowl from microwave and stir. Repeat process until most of the chocolate has melted and is smooth. Let stand, stirring occasionally, until all of the chocolate melts and is smooth. You can also melt the chocolate over a double boiler on a stovetop by placing the chocolate in a metal bowl that fits over the top of a sauce pan with boiling water.
  2. Set aside 1 tablespoon each cranberries and pistachios. Stir remaining cranberries and remaining pistachios into chocolate.
  3. Spread mixture onto parchment paper in an even (1/4-inch-thick) layer. Top evenly with reserved cranberries and pistachios, and sprinkle evenly with the sea salt, pressing gently to adhere.
  4. Refrigerate 1 hour or until set. Break into bite-size pieces.
