Garlic roasted broccoli and cauliflower

Garlic can bring a lot of flavor to a side dish that packs a lot of fiber and vitamin C. Try it for dinner tonight!

Serves: 8; Portion size: 3/4 cup; Prep: 10 minutes; Cook time: 20 minutes.


10 ounces

fresh broccoli florets

10 ounces

fresh cauliflower florets

3 tablespoons

olive/canola oil

1/4 teaspoon

kosher salt

1 tablespoon

minced fresh garlic


  1. Heat a large stock pot over medium high heat, add broccoli and cauliflower.
  2. Blanch for 1 minute, drain, and toss with olive oil, salt and garlic.
  3. Roast in a 350 F degree oven until tender for about 15 minutes.
  4. Serve hot, cold or at room temperature.
