Greek marinated chicken

Meal: Supper; Serves:  4; Portion Size: 3 ounces.


2/3 tablespoon

fresh garlic cloves, peeled and mashed

2/3 tablespoon 

fresh basil, chopped

1/2 teaspoon

ground black pepper

4 - 3 ounces

boneless, skinless chicken breasts  

2/3 tablespoon

fresh oregano

8 tablespoons

olive/canola oil, 90/10 blend


  1. Place the chicken in a container; add the olive oil, oregano, basil, and pepper. Make sure the ingredients cover the chicken evenly.
  2. Place in the refrigerator for 6 or more hours.
  3. Preheat grill. Cook the chicken on both sides until the internal temperature is 165 F and the chicken is cooked through.
  4. Serve immediately or place in the refrigerator until ready for use.
