Spicy black bean dragon burger
You don't need ground beef to make a delicious burger. This black bean patty recipe packs so much flavor that you might find yourself reaching for a glass of water. It packs lots of protein, too.
Serves: 4; Portion size: 1 patty.
Ingredients
For the slaw:
1/2 cup shredded green cabbage
3 tbsp. thinly sliced red onion
3 tbsp. thinly sliced carrots
3 tbsp. thinly sliced red bell peppers
2 tsp. chopped fresh cilantro
1 tbsp. Sriracha hot chili sauce
1/3 tsp. cayenne pepper spice
2 tsp. unseasoned rice wine vinegar
1-1/2 tbsp. light mayonnaise
For the burger:
Olive/canola oil 90/10 blend in spray bottle
4 black bean burger, meatless, 3.3 ounces
4 romaine lettuce leaves
8 slices of tomato
4 whole wheat hamburger buns
Preparation
- Combine all the slaw ingredients in a bowl and mix until all ingredients are thoroughly combined. Refrigerate for at least 1 hour, can be made 1 day in advance.
- Lightly spray a grill or griddle pan with the oil. Cook the burgers for 6-7 minutes or until the internal temperature has reached 145 degrees. Keep warm until ready to assemble.
- Lightly toast the hamburger buns on a griddle or flat top. Place a leaf of romaine lettuce down and top with two slices of tomato. Add the hot black bean burger and top with 1/3 cup of the slaw. Place the top burger bun on top of the slaw and serve right away.
